I would love to be able to make plant-based cheeses. Does Rouxbe have a course or recipes on cheese making (preferably oil-free)?

Answer:

We don't have a cheese making course, but that's a rated year. However, in our Plant Pro, which is sort of like, I'll put it to you in this way, it's sort of like graduate school of our, um, pro plant. Um, this is Plants Plus, that's right. Uh, and there are a couple of cheese recipes in there, uh, that I actually contributed. Uh, I love making nut cheeses. Uh, there is an article that you can read, um, that's based on the book. Uh, this Cheese is nuts and, uh, has some wonderful recipes in the book itself. If you read the article, you'll see some blue cheeses, some Greek cheese, and some cashew, uh, cheddar cheeses that I have made. The only two things that you really need in your kitchen are some, some raw, uh, cashews. Uh, and you don't wanna have them, or you don't wanna have them roasted or baked or anything like that. You just want raw cashews. And then the other primary ingredient in any cheese, vegan cheese that you're gonna make is gonna be agar powder. Where do I find this? You can get this at, uh, grocery store like mom's organic market sprouts, um, whole Foods Market, if I didn't already say that. And you can also get it at a vitamin shop. Uh, they sell it there as well, and it keeps for a long, long time. And, uh, if by any chance you happen to be allergic to nuts and you still wanna make cheese, I like using garbanzo beans. Um, instead, uh, cooked garbanzo beans instead of using the cashews. Uh, they make a beautiful cheese. Uh, the cheese itself for this recipe comes out like a, um, a hard cream cheese, but they're fun to make. Um, they're easy to make. They take minutes to make. You'll need a stove and a wooden spoon. Always use a wooden spoon whenever you are making any kind of plant-based cheese. So that is a, uh, very good question. I would suggest you read the article and, uh, you know, our Plants Plus program is really a lot of fun and it has some really good recipes. And I love when I see the final photo that is usually a plant-based charcuterie board with a beautiful homemade wedge or circle of a plant-based cheddar. Uh, they're also very economical to make as well. So I think that's another important factor when we look at recipes of things that we want to make that are plant-based.
